Happy Oyster

I spent the weekend in Gordon's Bay hoping to get away from the office and traffic vibes... and man was it perfect. Surrounded by good company, wine, a proper view and good food I found myself in a situation I wouldn't mind being in every second of the day.

On Saturday night, after watching the sun set and wining ourselves up we decided to take a walk down the road to find a good place to eat. It wasn't long before we came across Happy Oyster, a restaurant and bar packed with people who are there to drink, listen to the live band and stuff their faces with some of the best seafood there is to offer.

We waited about 20minutes at the bar before getting a table, 2 shooters down and it was time to eat. I now wish that I took more photo's on the evening, but at least I have a reason to go back now.

BBQ Buffalo Wings


Don't even get me started on my love for Buffalo Wings. When at a restaurant, I very rarely order anything else to be honest.

Here's a Barbecued Buffalo Wings recipe found on the Simply Recipes site:


Barbecued Buffalo Wings Recipe


Prep time: 5 minutes


Cook time: 1 hour, 30 minutes.


INGREDIENTS


3 pounds chicken wings

Salt

2 Tbsp vegetable oil



Sauce:

  • 1 stick unsalted butter
  • 12 Tbsp hot sauce (Crystal, Texas Pete, Tabasco, etc)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper


METHOD


1 To make the sauce, mix all of the ingredients together in a small pot set over low heat and stir constantly until the butter melts. Once the butter melts, whisk the sauce vigorously off the heat and set aside. It should remain liquid throughout the cooking process. If it starts to solidify, heat it up just enough to melt it, whisking all the time. You don't want this sauce to boil.


2 Using a sturdy chef's knife or poultry shears, cut off the wing tips and either discard or reserve (we usually freeze) for making chicken stock. Use the knife or sheers to separate the drumettes from the flats (the mid- joint wings).


3 Toss the wings with the vegetable oil and the salt, and arrange in one layer on the grill set over low heat. If you are using charcoal or wood, it will be very difficult to do this, so set your fire on one side of the grill and arrange the wings on the other side, away from the direct heat. You want them to cook slowly, with little or no sizzle. Cover the grill and cook like this for 30 minutes.


4 Turn the wings and paint with the Buffalo wing sauce. Close the grill and cook for another 30 minutes. Repeat the process, until the wings are done to your liking, this time painting the wings every 15 minutes or so. Make sure you have a little leftover sauce to toss the wings with at the end.


Yield: Serves 1-12, depending on your appetite.

Bloody Mary with a twist

The Bloody Mary is known for helping us the day after the night before. It's the one thing we trust when it feels like theres a little man inside our heads trying to bash his way out with a baseball bat.

Few people know that there are some recipes out there that shake things up a bit, like this 'Bacon Bloody Mary'. Yes that's right, a combination of the hangover buster and the tastiest food ever (I absolutely love bacon). You don't have to keep to the recipe though, it's perfectly fine to experiment by adding some other ingredients too (see pictures).

Serves 1
Add some bacon in a highball glass filled with ice
Fill glass with tomato juice
Add:
1 dash celery salt
1 dash ground black pepper
1 dash Tabasco
2 to 4 dashes Worcestershire sauce
1/8 tsp. horseradish (pure, not creamed!)
dash of lemon or lime juice
